
Chicken in tomato sauce with bucatini pasta

Ingredients
- 4 pieces of chicken (choose your favorite, white or dark meat or both)
- 1 pkg bucatini spaghetti (any other spaghetti will do as well)
- 250g/ 1/2 lb. feta cheese, crumbled
- 100ml/ 1/2 cup white wine
- 80ml/ 1/3 cup extra virgin olive oil
- 1 large onion, finely chopped
- Salt, pepper
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 500ml/2 cups chicken stock or warm water
- 1 cup tomato sauce (ready made in a jar or freshly grated tomatoes - avoid canned)
- 2 tbsp. tomato paste
Directions
- 1. Wash the chicken pieces, pat dry and season with salt and pepper.
- 2. Heat the olive oil in a pot, over medium-high heat.
- 3. Add the chicken and brown on all sides, reduce heat if oil gets too hot.
- 4. Add the onion, stir gently until softened.
- 5. Add the ground cloves and cinnamon, salt and pepper.
- 6. Allow spices to sautee for 1 minute while gently stirring.
- 7. Add the wine and wait for it to evaporate.
- 8. Add tomato sauce, tomato paste and just enough water or chicken stock to cover the chicken.
- 9. Simmer over low heat for about 1 ½ hours, sauce should be nicely condensed.
- 10. Stir in the feta cheese at the end.
- 11. About 30 minutes before serving, prepare the pasta according to the package directions.
- 12. To serve, place the pasta on the dish first. Top with a piece of chicken and then spoon the sauce over the pasta and chicken.
