Golden pan fried calamari

Ingredients
- 900g/2lb calamari rings (3-4 cm/1 inch thick)
- ½ cup organic non-gmo all purpose flour
- 1/3 cup olive oil (for frying)
- ½ tsp sea salt, ½ tsp freshly ground black pepper
- 1 lemon, quartered
Directions
- 1. Wash the calamari and pat dry with a paper towel.
- 2. Add the salt and pepper to the flour.
- 3. In a large plastic food bag, add the flour and the calamari and shake until all the rings are well coated.
- 4. In a large pan, heat the oil to be hot but not smoking.
- 5. Add the calamari, using a fork separate them to keep them from touching each other.
- 6. Cook the rings for 2 minutes and then turn each one over with a fork and cook for another 2 minutes. Remove and place on a platter lined with paper to drain excess oil.
- 7. Continue to cook the rest of the calamari in the same way.
- 8. If you are also using the legs, then leave those for last and cook only one minute on each side. Be careful as the legs tend to splatter.
- 9. Serve on a platter with lemon wedges.
