Ingredients
- Fresh Mushrooms: 400grams (1 pound), cleaned and thinly sliced
- Onions: 120 grams (½ cup), finely chopped
- Garlic: 1 clove, finely minced
- Fresh Tomatoes: 200grams (½ pound), chopped or canned
- Pappardelle Pasta: 400g (1 pound)
- Extra Virgin Olive Oil: 45 ml (3 tbsps)
- Organic vegetable cube: 1
- Fresh Parsley: 30 ml (2 tbsps), chopped
- Sea salt: 1 tsp, and freshly ground black pepper to taste
- Parmesan Cheese: 60 grams (1/2 cup), for serving
Directions
- 1. Heat the Oil: In a non-stick pan, heat 45 ml (3 tbsps) of extra virgin olive oil over medium heat.
- 2. Saute Onions and Garlic: Gently sauté the onions and garlic for about 2 minutes.
- 3. Add the mushrooms: Add the mushrooms and continue to sauté another 2 minutes.
- 4. Add the Tomatoes and Season: Add the tomatoes, salt and pepper and cook for 4-5 minutes.
- 5. Add the vegetable cube: Dissolve the vegetable cube in the sauce.
- 6. Thicken the Sauce: Cook for about 20 minutes or until the sauce thickens.
- 7. Cook the Pasta: Prepare the pasta according to the package directions, but strain 2 minutes before the required cooking time.
- 8. Combine Pasta with Sauce: Add the pasta and parsley to the sauce in the pan, gently heating through for about 2 minutes (pasta should be cooked to “al dente” – do not overcook). Stir very very gently with a wooden spoon to evenly coat the pasta.
- 9. Add Cheese: Sprinkle with freshly grated parmesan cheese.
- 10. Serve: Serve immediately while still hot.
