Red beetroot with walnuts, garlic and Greek yogurt

Ingredients
- 1kg/about 2lb organic red beetroots, prefer non-GMO labeling
- 2-3 garlic cloves, finely minced
- 1 cup walnuts, coarsely chopped
- ¼ cup extra virgin olive oil
- 2-3 tbsp white wine vinegar
- 2 cups organic Greek yogurt
- sea salt
Directions
- 1. Wash beets very well.
- 2. Boil in plenty of water until tender. (pre-cooked organic, non-gmo red beetroots can also be used)
- 3. When cool enough to handle, peel and cut in cubes.
- 4. In a bowl, whisk the yogurt, olive oil, vinegar and salt until well blended.
- 5. In a large bowl, toss the beets, garlic and walnuts until nicely mixed.
- 6. Top with the yogurt sauce.
